Easy Avacado Egg Salad

Sometimes the easiest meals are the best because you can satisfy your hunger while not having to spend lots of time in the kitchen.  We love eggs because they are a great source of protein, and this avocado egg salad is the perfect way to have eggs for lunch and as a snack!  One of the reasons we enjoy this egg salad is beacuse it has no mayonnaise and is pretty light.  You can jazz it up with hot sauce and spices, or keep it simple, whichever you prefer.



Ingredients
  • 6 eggs, hard boiled
  • 1-½ ripe avocados, peeled and mashed
  • 1-1/2 tablespoon fresh lemon juice (or lime juice)
  • ½ teaspoon fine sea salt, or to taste
 Instructions
  1. Add the eggs to a medium-sized pot and cover with a few inches of water. Cover and place on high heat. Bring water to a full (but gentle) boil and cook for 10 to 12 minutes.
  2. Drain the water and immediately run cold water over the eggs. Transfer eggs to an ice bath and allow eggs to chill for 10 minutes. Refrigerate eggs until ready to use.
  3. Peel and roughly chop the hard boiled eggs.
  4. Add the avocado to a mixing bowl with the lemon juice and sea salt. Mash the avocado, leaving it slightly chunky if desired. Add the chopped hard boiled eggs and stir well to combine. Eat on toasted bread with watercress or greens of choice.

Gourmet Grilled Cheese

One of our favorite lunches to make during the fall and winter is grilled cheese!  It is such a comforting food and one that the whole family enjoys.  While we have always been a fan of the traditional grilled cheese, we love to mix it up and make some more adult and gourmet versions that are great for lunches and dinners equally.  This pesto, mozzarella, spinach, & avocado grilled cheese is the perfect combination of textures and flavors, that we know you will love it as much as we do!




Pesto Recipe

  • 1 clove garlic
  • 1 anchovy fillet in oil
  • ½ small shallot, chopped
  • 1 teaspoon lemon juice
  • handful chopped fresh Italian parsley
  • handful chopped kale
  • 2-3 tablespoons chopped fresh tarragon
  • 1 tablespoon chopped chives
  • ¼ cup olive oil
  • salt and pepper to taste

Sandwich Ingredients

  • 2 slices of whole grains and seeds bread
  • 2-3 tablespoons of homemade Pesto
  • 2 slices of mozzarella
  • handful fresh baby spinach
  • ¼ avocado
  • 2 tablespoons goat cheese crumbled
  • olive oil

Instructions

  • Spread about 1 tablespoon of your fresh homemade Pesto onto each slice of bread.
  • On one slice of bread, add 1 slice of cheese, sliced avocado, crumbled goat cheese, spinach, second slice of cheese, then top it with second slice of bread. 
  • Press together gently
    Heat 1 tablespoon olive oil in a frying pan over medium low heat and add the sandwich to the oil, cook until bread is golden brown. 
  • Press down on the sandwich lightly, then flip the sandwich over and cook until second side is golden brown, and enjoy your healthy-gourmet sandwich!
