Grilling with Dad

When we think of summer foods, we often gravitate towards recipes that can be prepared on the grill.  Summer foods just always seem to taste better when dad lights up the charcoal and gets grilling.  So in honor of of week-long celebration of dad, we wanted to share a yummy grill recipe!  There are so many items that taste delicious when prepared on the grills (steak, chicken, veggies, even pizza!) and today we are grilling up Chili Lime Shrimp Kabobs!  Nothing says summer grilling like kabobs, and the combination of shrimp and pineapple is scrumptious.


Ingredients

Marinade
  • juice and finely grated zest of one lime
  • 2 tablespoons olive oil
  • 1/2 tsp cinnamon
  • 1/2 teaspoon sea salt
  • 1/4 tsp pepper
  • 1 finely minced shallot
  • 1 tsp crushed chili sauce (more or less to taste depending on how much heat you prefer)
12 jumbo shrimp
Fresh pineapple chunks (about the size of the shrimp)
Fresh pepper slices (about the size of the shrimp)

Instructions

  • Mix marinade ingredients together and add to a large zip-loc bag along with the shrimp.
  • Squeeze the air out of the bag and let the shrimp marinate for about 20 minutes before placing them on pre-soaked bamboo skewers along with the peppers and pineapple.
  • Add the remaining marinade from the bag to a small pot along with 1/4 cup of honey and simmer for about 3 minutes
  • Place the kabobs on very hot preheated grill for about 3 minutes per side or until the shrimp are fully cooked. Brush the glaze onto the kabobs while grilling.
